Coconut flour is useless for thickening sauces.

What does it do instead?

It's low in carbohydrates- that's why we bought it. I suppose you can use it to make bread and cakes, but we haven't tried yet.

It tastes- unsurprisingly- of coconut.

I didn't know there was such a thing. Is it the flesh of the coconut, dried and powdered? Or is it what I call dried coconut milk? Or something else altogether?

I think it's the flesh of the coconut, grated small, but I'm not altogether sure.

To thicken sauces, and not use wheat, try cornstarch, rice or potato flour.

We were trying out the coconut flour because it's low in carbs. It's carbs we're trying to get away from.
