Courgettes are or were in season- so we bought a lot of them- and (because we really hate to waste food) we've been searching for recipes to use them in. This is the best so far-  cheap, easy, fast and delicious.

Looks yummy!

I'm usually over run by zucchini by the end of summer. Can I assume that "houmous" is what we call here "hummus", a paste made from chick peas?

Yes, different sites seem to spell it differently

Yeah, it's because there's no real standard for converting Arabic words into English. It's just sort of sounded out.

I've been learning just how versatile the courgette/zucchini is.

We should really make our own hummus/houmous, but it's complicated- so we buy it readymade.

I buy canned chickpeas and mash them with garlic and lemon juice, serve with wedges of pita bread, a small piece of red onion, and a bit ofchopped tomato for garnish. Not really difficult. It would be if I had to start with dried chickpeas, and cook them before actually making the hummus.

I could do that. Maybe I should try.

If you have a food processor, it's quite easy. The only real problem, as I see it, is that tahini can be rather expensive--although it may be cheaper to buy online in the UK than it is here, given your closer proximity to the middle east (and better monetary exchange).

I have bought tahini in the past. I don't think it broke the bank. :)

Melt a little butter in a pan and slice up an onion or two. Saute the onion until soft, then toss in some sliced up courgettes, throw in a tin of tomatoes and sprinkle with some dill. Heat until the courgettes have softened up a bit. That's MY favourite way of cooking them.

That sounds good. I made ratatouille the other day- which is similar- only with the addition of aubergines and peppers.
