Pies

We have a lot of apples this year- and a lot of apples means a lot of pies. I've made three so far.

The first had nothing in it but apples- and was a bit dull.

The second had a handful of dried dates thrown in and was rich and mellow.

The third had ginger and blackberries- and was pretty good too. It's remarkable how much flavour there is in blackberries.

I haven't added sugar to any of them. No need.

We're enjoying a lot of blackberry and apple crumbles and pies at the moment, but though we have lots of blackberries, I have to buy the apples.

I'm not an expert on English cooking, but shouldn't there be blackbirds or something?

Try turning the apple slices in some lemon juice and cinnamon... The lemon can really help most fruits taste "like themselves, only more", and obviously apple and cinnamon is a classic combination.

(Though don't bother trying this while you can still mix in blackberries! That is so good... But in winter when there's nothing else in season, try it!)
