I love the musty taste but not the texture. I served them in place of potatoes yesterday and nobody was terribly keen. Ailz ate one and then forked her share onto my plate. "Slimy," she said. Of course I did them as plain as plain- just boiled and served straight. The Bible Mrs Beeton suggests a white sauce. Would that make them more palatable? Perhaps I should have fried them.

I had to google that.. I had no idea Topinambour was called like that in English :D. I actually like them a lot just treated like normal potatoes.. boiled, sliced and then sauteed with onions, garlic, some herbs like rosemary or oreganon and ground chili as much as you like. I have them in my garden and love the yellow flowers they make before producing food :)

Similarly, I boil them until slightly underdone, then sautéthem in butter and add lots of parsley.
