I love the musty taste but not the texture. I served them in place of potatoes yesterday and nobody was terribly keen. Ailz ate one and then forked her share onto my plate. "Slimy," she said. Of course I did them as plain as plain- just boiled and served straight. The Bible Mrs Beeton suggests a white sauce. Would that make them more palatable? Perhaps I should have fried them.

I had to google that.. I had no idea Topinambour was called like that in English :D. I actually like them a lot just treated like normal potatoes.. boiled, sliced and then sauteed with onions, garlic, some herbs like rosemary or oreganon and ground chili as much as you like. I have them in my garden and love the yellow flowers they make before producing food :)

They're really nice roasted. But they do cause massive gas, be warned.

Similarly, I boil them until slightly underdone, then sautéthem in butter and add lots of parsley.

Roasted is great, topping them with a strong cheese sauce makes them really enjoyable, but be warned of the flatulence afterwards.

Perhaps you boiled them for too long? I used to seve them with cheese sauce or grated cheese, but haven't seen them for years. Everyone says thatthey are "gassy", but we didn't notice that

I boiled them for about as long as I would boil potatoes.

I did consider the cheese sauce but was afraid it would smother the distinctive flavour. Next time, though, I think I'm going that route.

I am not keen on the texture when boiled or steamed, but like them baked much better. They make a lovely topping for pies mixed with regular mash. Ailz might appreciate the fact that they are lower carb/GI, too, if you need to persuade her to eat them again.

I want to have another go at them. I love the flavour. Baking seems like a good idea- sweat out some of the water.

I'd call that too long - most potatoes are much denser
