I was too lazy to carve my pumpkin (who was going to see it anyway?) but I did turn it into soup. Pumpkin has great texture; otherwise it tastes of whatever you put with it- in this case apple and spices.
I like the sweetness of pumpkin. I usually do this: boil 250 gms of pumpkin and mash it. Then I add half a green chili, juice of one small lime, a dash of olive oil, half an onion and salt to taste. It is ready. You don't have to cook it. You may season the mash with herbs; I use culantro. Goes well with meat fried with peppercorns and rice.
