I walked out into the field this morning and smelled pig farm. Or maybe it was somebody muck-spreading. Either way it had me thinking about pork crackling and apple sauce.

Pork crackling is something for which no adequate vegan substitute has yet been devised- at least so far as I'm aware- but I can live with that; crackling was always a treat not a staple. Apple sauce I may well be eating later today; we have these few Bramleys I picked from our tree (not a good harvest this year) and we need to do something with them.

I don't miss meat as such. Meat by itself is bland. What makes it interesting is what you do with it. Pork needs apple sauce- or an equivalent. Lamb needs mint sauce or an equivalent. Beef needs mustard...

I never liked ham that much. I sometimes fancy a bacon butty, but there are vegan bacon substitutes which are adequate (though I wouldn't put it higher than that. I love sausages but I get vegan sausages (from Meatless Farm) which are very good indeed...

They're out mucking here atm so most likely to be that.

I know that the bacon butty is the really hard one for a lot of people who give up meat- my brother found it so.

A sauce based on tahini might well work quite well- it's an ingredient I use a lot for rich sauces.

There are plenty of non egg pastas which as you know, I have need of.
