Most of my life I've eaten my root vegetables boiled. It is- I suppose- the English way- also the quickest- but recently I've learned the way to concentrate the flavour and make them actually worth eating is to roast them

Roasting is my favourite way to cook any vegetables, root or otherwise. Roast brussels sprouts or asparagus e.g. are also so much tastier. Roast potatos, sweet potatos, carrots, beets...SO good!

I did a dish of roasted roots yesterday- carrot, parsnip, sweet potato, swede. I don't believe I've ever roasted sprouts.

We roast/bake potatoes, onions, and carrots in the roasting pan right along with our chickens and pork roasts.

Yes, I've done that too.

Only I don't eat meat so I'm roasting them separately these days.
