Pies

We have a lot of apples this year- and a lot of apples means a lot of pies. I've made three so far.

The first had nothing in it but apples- and was a bit dull.

The second had a handful of dried dates thrown in and was rich and mellow.

The third had ginger and blackberries- and was pretty good too. It's remarkable how much flavour there is in blackberries.

I haven't added sugar to any of them. No need.

apple pies with currants are good, too.

Yes, certainly.

We're enjoying a lot of blackberry and apple crumbles and pies at the moment, but though we have lots of blackberries, I have to buy the apples.

We're lucky- we have both on site.

I'm not an expert on English cooking, but shouldn't there be blackbirds or something?

Not with apples. They don't go at all well together.

Lamb and apple go together for a savoury pie. And some traditional Cornish pasties have meat and veg at one end, and dessert at the other.

Lamb really needs something sharp to offset the fattiness.

Try turning the apple slices in some lemon juice and cinnamon... The lemon can really help most fruits taste "like themselves, only more", and obviously apple and cinnamon is a classic combination.

(Though don't bother trying this while you can still mix in blackberries! That is so good... But in winter when there's nothing else in season, try it!)

I think I'll be picking blackberries for a while yet. There are still plenty ripening on the bushes.

Apples pies with ginger and spice is good too.

I love ginger.

Mmmm that sounds delicious! What kind(s?) of apples do you grow?
