I don't understand the butcher part, but we used to do "tig and tag on the first day of the month
We used to play tig and tag as a running about playground game - but I can't remember how you tigged or tagged or what the difference was

The butcher is the person who's just done the tigging. This is a Manchester term. I'd not come across it before today.
