My father has an awful time going without potatoes. I found I did not miss them at all.

For instance I love stir fries with bits of leftover meats from a roast.
After I was diagnosed with wheat gluten intolerance, I dropped quite a bit of weight. I rarely eat spuds or other heavy carbs. And it makes a world of difference.
