Low Carb

Ailz is eating low carb- and doing very well off it- and I'm discovering it is actually possible to live without having potatoes at every meal.

My father has an awful time going without potatoes. I found I did not miss them at all.

We have eaten low-carb, off-and-on over the years and like it a lot. It can be expensive though and I am not sure how good a high-protein diet is for one's liver, over the long haul.

My former mother in law made that revelation to me when I was a girl of 21 years of age. I have also many times had a starch-free day, not by design, but because of cooking different styles of foods. Vegetables rule in my house, but that was not always the case with me. It is only since my forties that I have come to appreciate the myriad ways to prepare and enjoy them. For instance I love stir fries with bits of leftover meats from a roast.

We had cauliflower for lunch- roasted in the oven with olive oil, whole grain mustard and cheese.

After I was diagnosed with wheat gluten intolerance, I dropped quite a bit of weight. I rarely eat spuds or other heavy carbs. And it makes a world of difference.

I was conditioned to think of potatoes as a dietary staple. In post-war Britain it was almost unheard of to eat a meal that didn't include them.
