Cake

I'm so proud of my carrot cake I undertook to make one for the in-laws' diamond wedding celebrations (which are tomorrow, but the cake has to be delivered today). I did the baking yesterday afternoon. I checked the cake this morning (I didn't bother yesterday because of the aforementioned confidence) and found it had all the lightness and fluffiness of a manhole cover. Luckily I'm up early- because of smoke alarm malfunction- and I've had time to throw a second one together (with extra lashings of baking powder) and it's in the oven now.

It's a very simple one I found online at "http:en.wikibooks.org/wiki/Bookbook:Carrot_Cake". I've used it successfully several times. I don't know what went wrong; maybe I didn't use enough baking powder.
