The Palate Adjusts
May. 9th, 2023 06:39 pm I used to make a mean cheese sauce. Lots of mustard, lots of pepper. Dishes involving cheese sauce were my favourites.
Then I became a vegan and that involved giving up dairy. It was a wrench.
But my palate has adjusted. Now once in a while- especially if we're dining out- I find myself eating something containing milk, butter or cheese- and it always comes as a horrid shock. Dairy tastes sour and rank to me now. I ordered macaroni cheese at the weekend and wished I hadn't....
