Apples are wonderful. I'm currently overwhelmed with cherries, having spent Monday and Tuesday helping my uncle with the cherry harvest - so I have made pickles, jams, Rumtopf and whatnot of around 10 pounds of cherries yesterday and today. But... Give it another week and I'll be ready to start apple season!
I must remember to try prising Mum's recipe for her applecake from her. It's a sort of shortbread/sponge hybrid base I've not encountered anywhere else, covered with a tangy apple sauce. Beautiful hot or cold - I usually preferred it warm, with a bit of vanilla ice cream, or just a bit of double or clotted cream
And then, of course, we have the wonders of cider to contemplate upon. Possibly requiring research.

You fry your cubes of lard, then add sliced or diced apples to the frying pan and sautée them at low heat until they begin to disintegrate. It's wonderful when served on dark rye bread. (And I like to make these old-fashioned regional recipes. They will die out if nobody makes them, so I'll be everybody's grandmother!)
